In this week’s podcast, I promised to put up my family’s recipe for Nanaimo bars… so here you go! They’re easy to make, delicious to eat, and perfect to share. Enjoy!
What you need:
6 oz. semi-sweet chocolate, chopped up
1 1/4 cup butter, softened + 4 tbsp butter for top
1 tsp. vanilla
2 cups graham crumbs
1 1/2 cup flaked coconut
3 Tbsp. Bird’s Custard Powder
2 cups icing sugar
3 Tbsp. milk
What you do:
Melt 2 oz. chocolate and 1/2 cup butter together, stirring until everything is melted and hot. Remove from stove, and mix in the egg and vanilla. Then add the graham crumbs and coconut. Press this mixture into bottom of 9-inch square pan.
Whisk together the custard powder and milk, then add 3/4 cup of the remaining butter and mix well. Gradually beat in the sugar and spread onto crust. Refrigerate for 20 minutes.
Melt the remaining 4 oz. chocolate and 4 tbsp butter over low heat, stirring until everything is completely blended together. Don’t rush it! Once it’s smooth, spread over the chilled custard icing layer.
Refrigerate for another hour, then cut into bars. YUM!
